Ingredients
  

Pasta and Chicken

  • 1 lb penne pasta firm texture
  • 1 whole rotisserie chicken 3-4 lbs, shredded (about 4 cups meat)

Vegetables

  • 4 cups broccoli florets fresh or frozen
  • 1 medium yellow onion, diced provides sweetness and depth
  • 3 cloves garlic, minced for aromatic base

Sauce Ingredients

  • 2 tbsp olive oil for sautéing and flavor
  • 2 tbsp butter adds richness
  • 1 cup heavy cream for creaminess
  • 1/2 cup low-sodium chicken broth adds moisture
  • 1 cup Parmesan cheese, grated flavorful and adds saltiness
  • 1/2 cup mozzarella cheese, shredded melts beautifully

Seasoning

  • 1 tsp Italian seasoning herbal flavor profile
  • 1/2 tsp garlic powder enhances garlic flavor
  • 1/4 tsp red pepper flakes optional, for spice

Instructions
 

Cooking Pasta

  • Cook the penne pasta in a large pot of boiling salted water until al dente, about 10-12 minutes. Drain and set aside.

Sautéing Vegetables

  • Heat olive oil in a large skillet over medium heat, add diced onions and sauté until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute, stirring frequently.

Cooking Broccoli

  • Add broccoli florets and stir; cook for 3-4 minutes until bright green and tender-crisp if fresh.

Making the Sauce

  • Reduce heat to low, add butter, and allow it to melt. Then slowly add heavy cream and chicken broth while stirring.
  • Incorporate shredded rotisserie chicken and heat through for 2-3 minutes.
  • Add Parmesan and mozzarella cheese, stirring until fully melted.
  • Stir in Italian seasoning, garlic powder, and optional red pepper flakes.

Combining Pasta and Sauce

  • Add the cooked penne pasta to the sauce and gently fold until well coated.

Notes

This dish makes excellent leftovers and can be adjusted with various vegetables or proteins. For a thicker sauce, let it simmer a bit longer.
