Preparation

  • Begin by bringing a large pot of water to a boil. Once it’s bubbling, add the bowtie pasta and cook it according to the instructions on the package until al dente.
  • While the pasta is cooking, mince the garlic, slice the tomatoes in half, and dice the chicken breasts into bite-sized pieces.

Cooking

  • In a large deep skillet, drizzle with olive oil and heat it over medium-high until it shimmers. Add the diced chicken and season with salt and pepper. Cook until the chicken is no longer pink.
  • Once the chicken is cooked through, add the minced garlic and oregano to the skillet. Cook until the garlic is fragrant, about 30 seconds.
  • Pour in the white wine to deglaze the skillet, scraping any browned bits from the bottom of the pan.
  • After deglazing, add the remaining olive oil, stir to combine, and lower the heat to a gentle simmer.
  • Drain the cooked pasta and add it to the skillet, tossing it in the sauce until well coated.
  • Incorporate the halved tomatoes and crumbled feta cheese into the pasta mixture, stirring gently to combine.
  • After an additional 1-2 minutes, remove the skillet from heat.

Notes

Don't overcook the pasta. Ensure you season the chicken properly and choose good quality olive oil for better flavor. Let the dish rest for a few minutes before serving for the best taste.
