  • a few slices salami (approx. 20g) Texture, flavor

Preparation

  • Start by cracking the three eggs into a mixing bowl. Use a whisk or fork to beat them until they are well blended.
  • Add the grated reduced-fat cheese into the bowl with the beaten eggs. Stir gently to combine everything.
  • Incorporate the tablespoon of passata into the egg mixture, stirring lightly.
  • Slice the salami into smaller pieces and fold them into the egg mixture.

Cooking

  • Heat a non-stick skillet over medium heat, and once it is warm, pour the egg mixture into the pan.
  • Allow the eggs to cook undisturbed for a few moments until they start to set.
  • As the eggs begin to set around the edges, use a spatula to gently stir the mixture from the edges toward the center.
  • Continue to cook until the eggs are just set but still slightly runny in the middle.
  • Once your eggs are cooked to your preference, sprinkle mixed herbs on top.

Notes

For extra creaminess, consider adding a bit more cheese. Experiment with different herbs for variety. Keep the heat medium to avoid burning.
