Ingredients
  

For the Marinade

  • 1/3 cup ketchup adds sweetness and depth
  • 1/3 cup packed dark brown sugar enhances caramelization
  • 1/3 cup low-sodium soy sauce provides umami flavor
  • 1/4 cup canned pineapple juice adds moisture and sweetness
  • 4 Tbsp olive oil, divided for marinating and grilling
  • 1 1/2 Tbsp rice vinegar adds tanginess
  • 4 cloves garlic, minced offers aromatic flavor
  • 1 Tbsp minced ginger adds warmth and spiciness
  • 1/2 tsp sesame oil provides a nutty undertone
  • Salt and freshly ground black pepper enhances overall flavor

For the Kabobs

  • 1 3/4 lb boneless, skinless chicken breast, chopped into 1 1/4-inch cubes main protein, tender texture
  • 3 cups fresh cubed pineapple juicy sweetness
  • 1 1/2 large green peppers, diced adds crunch and color
  • 1 large red onion, diced provides sweetness and depth

Instructions
 

Preparation

  • In a mixing bowl, whisk together the ketchup, dark brown sugar, soy sauce, and pineapple juice until smooth.
  • Incorporate 2 tablespoons of olive oil, rice vinegar, minced garlic, ginger, and sesame oil into the mixture.
  • Stir in the diced green peppers and season with salt and pepper to taste.
  • Place the cubed chicken into a resealable bag and reserve 1/2 cup of the marinade.
  • Pour the remaining marinade over the chicken, seal the bag, and toss gently to coat each piece well.
  • Marinate the chicken in the refrigerator for an hour.

Cooking

  • Preheat the grill to 400°F (200°C).
  • Drizzle the remaining 2 tablespoons of olive oil over the diced green peppers and red onions, then toss to coat evenly.
  • Thread the marinated chicken, pineapple, green peppers, and red onion onto skewers, alternating between the chicken and vegetables.
  • Grill the skewers for about 5 minutes before brushing them with reserved marinade.
  • Rotate the skewers and grill for an additional 4 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  • Once cooked through, remove the skewers from the grill and serve warm.

Notes

Marinate the chicken for the full hour for best flavor. Do not overcrowd the skewers to ensure even cooking. Soak wooden skewers in water for 30 minutes if using them.
