Preparation

  • Start by gathering your chicken breast and cutting it into 1 1/2-inch cubes.
  • In a mixing bowl, combine the low-sodium soy sauce, honey, olive oil, minced garlic, grated ginger, lime juice, kosher salt, and black pepper. Whisk together until the honey is fully dissolved.
  • Add the chicken cubes to the marinade, ensuring they are thoroughly coated. Allow the chicken to marinate for at least 30 minutes at room temperature, or up to a few hours in the refrigerator.
  • Prepare the pineapple chunks, cutting them into pieces similar in size to the chicken.
  • Thread the marinated chicken and pineapple chunks onto the skewers.

Cooking

  • Preheat your grill or oven. Lightly oil the grates if grilling.
  • Place the skewers on the grill and cook until the chicken is golden brown and reaches an internal temperature of 165°F.
  • Remove the kabobs from the heat and let them rest for a few minutes before serving.
  • Sprinkle the chopped chives or green onions on top before serving.

Serving

  • Serve the kabobs warm, alongside a simple salad or over a bed of rice.
