Preparation

  • Cut the boneless, skinless chicken breast into 1 1/2-inch cubes and drain the pineapple chunks if they're in juice.
  • In a mixing bowl, combine soy sauce, honey, olive oil, minced garlic, ginger, lime juice, salt, and black pepper. Whisk everything together.
  • Add chicken cubes to the marinade and toss to coat evenly. Let it sit for 15 to 30 minutes.

Cooking

  • Assemble the kabobs by alternating chicken cubes and pineapple chunks on the skewers.
  • Preheat your grill over medium heat. If using wooden skewers, ensure they have been soaked.
  • Grill the kabobs for 10 to 15 minutes, turning occasionally, until the chicken is opaque and pineapple caramelizes.
  • Remove from heat and let the kabobs rest for a few minutes before serving.
  • Garnish with chives or green onion just before serving.

Notes

Soak wooden skewers for at least 30 minutes before grilling to prevent burning. Make sure chicken pieces are uniform for even cooking. Marinate longer for deeper flavor; overnight is great if time permits. Use fresh, ripe pineapple for the best flavor.
