Preparation

  • Begin by preparing the chicken breasts. Place the chicken breasts on a cutting board, and use a meat mallet to pound them evenly.
  • Drizzle olive oil over the breasts and rub it on both sides to fully coat the chicken.
  • Sprinkle the seasoned mixture of garlic powder, Italian seasoning, salt, and black pepper evenly over the chicken.
  • Preheat your oven to 400°F. Allow the seasoned chicken to rest for a few minutes.

Cooking

  • Place the chicken breasts in a baking dish and transfer them to the preheated oven. Bake until the chicken is fully cooked.
  • While the chicken is baking, prepare the bruschetta topping by combining diced tomatoes, basil leaves, grated garlic, extra virgin olive oil, red pepper flakes, salt, and pepper in a mixing bowl.
  • Once the chicken reaches an internal temperature of 165°F, remove it from the oven.
  • Place a slice of mozzarella on top of each chicken breast.
  • Spoon basil pesto over the melted mozzarella on each chicken breast.
  • Drizzle balsamic glaze over the chicken.
  • Finish by squeezing fresh lemon juice over the top.
