Instructions
 

Preparation

  • In a mixing bowl, whisk together the creamy peanut butter, unsweetened coconut milk, fresh lime juice, soy sauce or fish sauce, brown sugar, ground ginger, minced garlic, and crushed red pepper flakes until smooth.
  • Place the chicken thighs in a baking dish or skillet, arranging them evenly.
  • Pour the prepared sauce over the chicken thighs, ensuring they are coated evenly.
  • Cover the dish tightly with aluminum foil to retain moisture.

Cooking

  • Bake the covered chicken in a preheated oven until fully cooked, approximately 25-30 minutes.
  • Check for doneness with a meat thermometer; the internal temperature should reach 165°F.
  • Once cooked, remove from oven, uncover, and allow to rest for a few minutes.

Serving

  • Serve the chicken over cooked rice, spooning extra sauce on top.
  • Garnish with lime wedges, peanuts, chopped green onions, and cilantro before serving.
