Ingredients

Marinade

  • 4 cloves garlic, minced/grated adds depth of flavor
  • 1 tablespoon olive oil provides moisture
  • 1 tablespoon lime juice adds acidity
  • 1 tablespoon soy sauce brings umami
  • 1 tablespoon honey (or brown sugar, or sugar) adds sweetness
  • 2 teaspoons ground cumin offers warm, earthy notes
  • 1 teaspoon oregano provides herbaceous undertones
  • 2 teaspoons paprika adds color and mild sweetness
  • 1/4 teaspoon ground annatto (optional) for color
  • 1/2 teaspoon cayenne (optional) adds heat

Main Ingredients

  • 1 pound boneless and skinless chicken breasts or thighs, cut into bite-sized pieces the main protein source

Instructions

Preparation

  • In a mixing bowl, combine minced garlic, olive oil, lime juice, soy sauce, honey, ground cumin, oregano, paprika, annatto, and cayenne. Whisk until smooth.
  • Add bite-sized chicken pieces to the marinade, ensuring each is coated. Cover and refrigerate for at least 20 minutes.

Grilling

  • Remove chicken from refrigerator, shaking off excess marinade. Thread chicken pieces onto skewers.
  • Preheat grill to medium-high heat. Grill skewers for 2-4 minutes on each side or until cooked through and lightly charred.

Notes

For best results, marinate chicken longer for richer flavor; using fresh ingredients enhances taste; avoid overcrowding skewers; ensure even cooking.
