Ingredients
  

Main Ingredients

  • 12 oz spaghetti or pasta of choice
  • 3 tbsp olive oil extra virgin
  • 2 cloves garlic minced
  • 3 cups fresh tomatoes cherry or grape, halved (or chopped large tomatoes)
  • 1/2 tsp salt plus more for pasta water
  • black pepper to taste

Optional Toppings

  • fresh basil or parsley torn or chopped
  • grated Parmesan or pecorino

Instructions
 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1 cup of pasta water, then drain.
  • While pasta cooks, heat olive oil in a skillet over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  • Add tomatoes and salt to the skillet. Cook for 5–7 minutes, stirring occasionally, until tomatoes soften and release juices.
  • Add cooked pasta to the skillet along with a splash of reserved pasta water. Toss to combine and simmer for 1–2 minutes.
  • Season with pepper and add basil, parsley, or cheese if desired. Serve warm.

Notes

Use cherry or grape tomatoes for best flavor and color. No need to peel tomatoes—skins soften as they cook. For added richness, stir in a spoonful of pesto or ricotta. Store leftovers in the fridge and enjoy within 2 days, hot or cold!
