  • zesty Italian salad dressing
  • rotini or rotelle pasta cooked and drained
  • yellow onion chopped
  • celery thinly sliced
  • cojack cheese cubed
  • summer sausage cubed
  • artichoke hearts quartered and drained
  • pitted black olives drained
  • sun-dried tomatoes julienned, drained and chopped
  • sea salt to taste
  • ground pepper to taste
  • red pepper flakes optional
  • grated Parmesan cheese for topping

Instructions
 

  • Prepare all ingredients by chopping, slicing, and draining as needed.
  • Place all ingredients in a large mixing bowl, including pasta, vegetables, meats, and dressing.
  • Gently mix until evenly combined.
  • Cover the bowl tightly and refrigerate overnight to let flavors blend.
  • Before serving, stir the salad to refresh and taste for seasoning. Add salt, pepper, or a drizzle of olive oil if needed.
  • Serve chilled and enjoy!

Notes

To boost flavor, use the oil from the sun-dried tomatoes. Fresh herbs like basil or chives also make a great finishing touch. Letting it chill overnight is key for flavor development.
