Instructions
 

Preparation

  • In a large mixing bowl, combine the ground chicken and breadcrumbs. Use a spoon or spatula to mix them gently but thoroughly.
  • Add the grated Parmesan cheese to the chicken mixture and stir until evenly distributed.
  • Crack the egg into the bowl and mix it in thoroughly.
  • Pour in the milk and mix until the mixture is smooth and uniform.
  • Incorporate the minced garlic and finely chopped onion into the mixture and stir until evenly distributed.
  • Add the chopped parsley, Italian seasoning, salt, and black pepper. Mix until combined.
  • Transfer the mixture into a baking dish, shaping it into a loaf.
  • If using, sprinkle the shredded mozzarella cheese over the top.
  • Optionally, spoon the marinara sauce over the cheese.

Baking

  • Bake the meatloaf in a preheated oven until it is cooked through and the internal temperature reaches a safe reading.

Notes

This meatloaf is versatile, great for dinner, breakfast or leftovers in sandwiches or over pasta. Make sure to adjust seasoning to suit personal taste. Allow the meatloaf to rest briefly after baking before slicing.
