Spice Rub

  • 1 tsp chili powder adds mild heat

  • 1 tsp kosher salt enhances flavor

Cooking Fat

  • 0.25 cup avocado oil or butter keeps chicken moist and helps it brown

Instructions
 

  • Preheat oven to 425°F (218°C). In a large bowl, whisk together brown sugar, paprika, chili powder, garlic powder, onion powder, thyme, salt, and pepper.
  • Add chicken thighs and toss to coat thoroughly in the spice blend. Make sure each piece is well-seasoned.
  • Line a baking sheet with foil or use a cast-iron skillet. Arrange chicken thighs evenly and drizzle with avocado oil or dot with butter.
  • Bake for 20–30 minutes, flipping halfway through. Chicken is done when internal temperature reaches 165°F (74°C).
  • Optional: Broil for 1–2 minutes to add a charred finish. Watch carefully to avoid burning.
  • Let rest for 5 minutes before serving. This helps lock in moisture and flavor.
