Main Ingredients

  • 2 cups orzo pasta can substitute with gluten-free or ditalini
  • 150 g Boursin cheese 1 wheel; substitute cream cheese with herbs or goat cheese
  • 3 cups chicken or vegetable broth or warm water with bouillon cube
  • 2 tbsp olive oil or butter/avocado oil
  • 2 cloves garlic minced; or ½ tsp garlic powder
  • 1 cup spinach or broccoli or mushrooms, zucchini, or frozen vegetables
  • 1/4 cup Parmesan cheese grated; or mozzarella, cheddar, or nutritional yeast
  • fresh parsley for garnish; or basil/chives

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a medium baking dish with oil or butter.
  • In a skillet, sauté garlic in olive oil for 1 minute until fragrant. Add orzo and toast lightly.
  • Stir in broth and bring to a gentle simmer. Transfer mixture to prepared baking dish.
  • Place Boursin cheese wheel in the center. Cover tightly with foil and bake for 25 minutes.
  • Remove foil, stir to mix melted cheese into pasta. Add vegetables, stir again, and bake uncovered 5–10 minutes until tender and golden at edges.
  • Let rest 5 minutes. Garnish with Parmesan and fresh parsley before serving.

Notes

To prepare ahead, assemble dish before baking, cover, and refrigerate up to 24 hours. Freeze baked portions for up to 3 months; reheat with a splash of broth to restore creaminess.
