  • 8 oz pasta (penne, rotini, or shells) base of the dish
  • cups shredded cheddar cheese for flavor and creaminess
  • ½ cup shredded mozzarella cheese for stretch and creaminess
  • ¼ cup grated Parmesan cheese for a salty kick
  • 2 tbsp fresh parsley chopped for garnish

Instructions
 

Preparation

  • Begin by heating the olive oil in a large skillet over medium heat.
  • Once the oil is shimmering, add the finely chopped onion and cook until it softens, about 3 minutes.
  • Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  • Add the ground chicken, breaking it apart with a spatula as it cooks, and season with salt, black pepper, Italian seasoning, and red pepper flakes.
  • Cook the chicken until browned and no longer pink, about 5 to 6 minutes.
  • Stir in the tomato paste, cooking for about 1 minute.
  • Add the diced tomatoes with juices, chicken broth, and milk, stirring until combined.
  • Bring to a simmer before adding the uncooked pasta. Cover and let cook for 12 to 15 minutes, stirring occasionally.
  • Once the pasta is tender and the sauce thickens, lower the heat and stir in the cheddar, mozzarella, and Parmesan cheese until melted.
  • Remove from heat and let sit for a couple of minutes before serving.
  • Garnish with fresh parsley and enjoy.

Notes

For best results, ensure the ground chicken is thoroughly cooked, stir frequently while the pasta cooks, and adjust seasoning as desired.
