  • 2 cups fresh cheese tortellini (or ravioli)
  • 4 cloves garlic, minced
  • 4 tbsp butter (adds richness and flavor)
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 2 cups chicken broth (provides moisture and flavor)
  • 1 cup heavy cream (creates a creamy consistency)
  • 1 cup grated Parmesan cheese (adds salty flavor)
  • 1 tbsp fresh basil or parsley, chopped (adds freshness)
  • Salt and black pepper to taste

Preparation

  • Start by heating your large pot or skillet over medium heat. Once hot, add the butter and let it melt, swirling it around until it coats the surface. The butter should become bubbly but not browned.
  • Add the cut chicken pieces to the pot. Cook them until they’re no longer pink, making sure to stir occasionally for even cooking. This should take about 5 to 7 minutes.
  • Once the chicken is cooked through, stir in the minced garlic and crushed red pepper flakes. Sauté for about a minute, until fragrant.

Cooking

  • Pour in the chicken broth and bring it to a gentle simmer. Scrape any browned bits from the bottom of the pot and allow it to simmer for a couple of minutes to meld the flavors together.
  • Add the fresh cheese tortellini to the pot, stirring gently to combine. Cook until the tortellini are tender, about 3 to 5 minutes.
  • Reduce the heat and stir in the heavy cream and grated Parmesan cheese. Mix until the cheese melts completely and the sauce thickens slightly.
  • Season the dish with salt and black pepper to taste. Sprinkle in the chopped basil or parsley just before serving.

Notes

Make sure to use evenly sized chicken pieces for consistent cooking. Adjust the red pepper flakes based on spice tolerance. Stir gently to prevent tortellini from breaking.
