  • Remove the pot from heat and add 1 cup of cream cheese, stirring until melted and combined.
  • Incorporate 1 cup of diced tomatoes and stir gently to combine.
  • If using, fold in 1 cup of spinach and season with salt and pepper to taste before serving.

Notes
