  • Begin by heating a large pot over medium heat. Add the ground chicken and cook until it's no longer pink, breaking it apart with a stirring spoon.
  • Once the chicken is cooked through, add in the chopped onion and sliced bell pepper. Stir them into the pot and sauté for about 3 to 5 minutes.
  • After the vegetables have softened, stir in the minced garlic along with the chili powder, cumin, and paprika. Cook for about 1 minute.
  • Next, add the diced tomatoes and chicken broth to the pot. Stir everything together, allowing the mixture to simmer gently.
  • As the mixture simmers, add the pasta directly into the pot, ensuring it's submerged in the liquid. Stir occasionally.
  • Once the pasta is tender, reduce the heat to low and stir in the heavy cream. Mix until incorporated and season with salt and pepper to taste.
  • To serve, dish out the creamy pasta into bowls and garnish with fresh cilantro.

Notes

This dish can easily be served for a family dinner or as part of a larger spread. Leftovers can be refrigerated for 3 to 4 days or frozen for about a month. Adjust the spices based on your heat preference and add vegetables as you like.
