One Pot Creamy Parmesan Chicken Pasta

Seasoning

  • 1 teaspoon Italian seasoning, divided

Creaminess Additions

  • ¾ cup half and half creates creaminess
  • ¾ cup shredded Parmesan cheese finishing touch

Thickening Agent

  • 2 tablespoons all-purpose flour thickening agent

Cooking Components

  • 2 teaspoons olive oil cooking fat
  • 2 tablespoons butter adds richness
  • ½ medium yellow onion, finely diced aromatic base
  • 3 cloves garlic, minced flavor enhancer
  • 2 cups chicken stock moisture and depth
  • 8 ounces dried pasta starch component

Instructions
 

Preparation

  • Start by seasoning the chicken tenderloins or cutlets with salt, black pepper, and half of the Italian seasoning.
  • In a large pot or deep skillet, heat olive oil and butter over medium heat until the butter melts.
  • Add the seasoned chicken to the pot, cooking for about 4-5 minutes on each side, or until golden brown and cooked through.
  • Once cooked, remove the chicken from the pot and set it aside.
  • In the same pot, add the finely diced onion and sauté until softened, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Sprinkle in the flour and the remaining Italian seasoning, stirring to combine.
  • Gradually pour in the chicken stock, stirring constantly to avoid lumps.
  • Add the half and half and let it come to a gentle simmer.
  • Once simmering, stir in the dried pasta.
  • Cook the pasta according to package instructions, stirring occasionally.
  • Return the cooked chicken to the pot and mix in the shredded Parmesan cheese.
  • Taste the dish and adjust the seasoning if necessary.

Notes

You can swap the chicken for shrimp or a vegetarian protein for a lighter meal. If you want a further creamy texture, mix in some additional half and half at the end. Stir the pasta occasionally while it cooks to prevent sticking.
