Preparation

  • Start by melting 2 tablespoons of butter in a large soup pot over medium heat.
  • Add in the shredded or chopped carrots, seasoning them with the homemade seasoned salt and pepper. Stir gently to combine, then cover the pot and let them cook for about 5-6 minutes.
  • Once the carrots are tender, stir in the rice, dried minced onion, and minced garlic.
  • Incorporate the dried parsley and pour in the chicken stock. Increase the heat to high, bringing the mixture to a boil.
  • Once boiling, reduce the heat to medium-low and let the mixture simmer for about 15 minutes.
  • Season the chicken pieces with the same seasoned salt and pepper, then add the chicken to the pot.
  • Cook for an additional 7-10 minutes, stirring occasionally until the chicken is fully cooked and the rice is al dente.
  • Finally, stir in the remaining butter and adjust the seasoning with more salt and pepper if needed.
  • Allow the dish to sit for about 5 minutes before serving to thicken up.

Notes

Rest the dish after cooking to allow flavors to meld and the texture to stabilize. Experiment with vegetables and seasonings to suit your taste.
