  • Begin by heating the olive oil in a large skillet over medium heat until it bubbles around a wooden spoon.
  • Season the chicken breasts with salt and pepper, coating them evenly.
  • Place the seasoned chicken breasts in the hot skillet and cook for about 5-6 minutes on each side until golden-brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped onion and sauté for about 3 minutes until translucent.

Cooking

  • Stir in the rice, toasting it slightly for a minute or two.
  • Pour in the chicken broth, soy sauce, honey, and pineapple chunks; stir to combine.
  • Return the chicken to the pan, nestling it into the rice mixture, and bring everything to a simmer.
  • Cover the skillet with a lid and let simmer for about 15-20 minutes.
  • Check if the rice is cooked and chicken is tender; garnish with optional green onions before serving.

Let the chicken rest briefly after cooking to maintain moisture. Adjust seasoning to taste and do not rush the simmering process for best results.
