Preparation

  • Begin by heating the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper on both sides.
  • Place the seasoned chicken breasts in the skillet carefully.
  • Cook the chicken for about 5–7 minutes on one side without moving it around.
  • Flip the chicken to the other side and continue cooking until fully cooked through.
  • Remove the chicken from the skillet and set aside to rest.

Cooking

  • In the same skillet, add the tortellini and enough water to cover it based on package directions.
  • Stir gently as it cooks, ensuring it doesn’t stick to the bottom of the pan.
  • After a few minutes, add the cut asparagus and halved cherry tomatoes.
  • Stir together, letting the vegetables soften slightly while the tortellini finishes cooking.
  • Once everything is cooked, return the chicken to the skillet.
  • Pour the pesto sauce over the chicken, tortellini, and veggies, mixing everything well.
  • Give the dish a gentle stir, ensuring every element is coated in pesto.
  • Adjust seasoning with salt and pepper if needed and serve warm.

Notes

Allow chicken to rest after cooking for optimal tenderness. Use fresh pesto for a more vibrant flavor. Customize by adding different vegetables based on what you have on hand.
