Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Once the oil shimmers, add the seasoned chicken breasts to the pan.
  • Cook chicken for about 6-7 minutes on each side until golden-brown.
  • Add the minced garlic to the pan and stir quickly to avoid burning.
  • Pour the balsamic vinegar into the skillet, stirring gently.
  • Add the halved cherry tomatoes evenly around the chicken.

Cooking

  • Lower the heat to medium-low and cover the skillet; simmer for 5 minutes.
  • Add the diced mozzarella on top of the chicken and cover again.
  • Allow the cheese to melt for about 2-3 minutes.
  • Remove from heat and sprinkle with fresh basil just before serving.
