  • 1 cup long-grain rice texture, structure

  • ½ cup BBQ sauce sweetness, flavor
  • ¼ cup honey sweetness, glaze
  • 1 tsp garlic powder aroma, flavor
  • 1 tsp onion powder aroma, flavor
  • ½ tsp smoked paprika smokiness, depth
  • Salt and pepper to taste seasoning
  • 1 cup mixed vegetables (frozen or fresh) bulk, nutrients
  • Chopped green onions or parsley optional, for garnish

Preparation

  • Begin by preparing your chicken. If using chicken thighs or breasts, ensure they are cut into uniform pieces, which will help with even cooking. Season the chicken with salt and pepper to enhance the flavor.
  • In a large skillet, heat a drizzle of oil over medium heat. Once hot, add the seasoned chicken pieces. Sear them for about 5 to 7 minutes, or until they’re golden brown on the outside.
  • With the chicken browned, stir in the garlic powder, onion powder, and smoked paprika. Mix these spices in now to allow their flavors to bloom.
  • Next, add the rice to the skillet, stirring it in with the chicken and spices. Make sure the rice is evenly distributed.
  • Pour in the chicken broth and bring the mixture to a gentle simmer. Ensure everything remains well combined.
  • Once simmering, reduce the heat. Cover the skillet and let it cook for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.

Finishing

  • After the rice is cooked, drizzle the honey and BBQ sauce over the mixture. Stir gently to combine.
  • Fold in the mixed vegetables, allowing them to warm through and meld with the rest of the meal.
  • Once everything is well integrated, taste and adjust the seasoning with salt and pepper, if needed.
  • If you’d like, sprinkle chopped green onions or parsley on top before serving.

Notes

Make sure to season the chicken well for optimum flavor. Allow the dish to sit for a few minutes after cooking before serving to help the flavors settle.
