Preparation

  • Start by preparing your ingredients. Dice the onion and bell pepper, and mince the garlic.
  • Heat a large oven-safe skillet over medium heat. Add the ground chicken, cooking it until completely browned.
  • Drain off any excessive fat.
  • Add the diced onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until soft.

Cooking

  • Stir in uncooked rice, chili powder, cumin, salt, and pepper. Cook for about 1 minute.
  • Pour in diced tomatoes and chicken broth. Stir to combine and bring to a gentle simmer.
  • Cover and cook for 18-20 minutes until rice is tender and has absorbed most liquid.
  • After cooking, sprinkle shredded cheese on top and bake in a preheated 375°F oven for 5-7 minutes until cheese is melted.
  • Remove from oven, let it rest for 5 minutes, and garnish with fresh cilantro before serving.

Notes

For best results, ensure thorough browning of the chicken and do not skip toasting the rice. Adjust spices to preference and check rice tenderness before adding cheese.
