  • 1 tbsp avocado oil or olive oil adds moisture
  • 1 lb boneless, skinless chicken breast provides protein

  • ½ jumbo yellow onion, diced adds sweetness and texture
  • 4-6 large cloves garlic, minced for aromatic flavor
  • 8 oz dry penne pasta base structure for the dish
  • 2 cups chicken broth adds moisture and flavor
  • 1 cup finely grated parmesan cheese for creaminess and richness
  • ½ cup heavy cream adds richness and smooth texture
  • 2 tbsp chopped parsley for freshness

Instructions
 

Preparation

  • Heat a tablespoon of avocado or olive oil in a large skillet over medium heat.
  • Season the boneless, skinless chicken breast with Italian seasoning, paprika, salt, and pepper.
  • Once the pan is hot, add the seasoned chicken and cook for 5-7 minutes on each side until golden-brown and fully cooked.
  • Transfer the cooked chicken to a plate and let it rest for a few minutes.
  • In the same skillet, add unsalted butter and the diced onion. Cook until translucent, about 3-4 minutes.

Cooking

  • Stir in the minced garlic and sauté for an additional minute.
  • Add the dry penne pasta and chicken broth to the skillet, stir well and ensure the pasta is submerged.
  • Bring the mixture to a gentle boil, then reduce to a simmer. Cook the pasta until al dente, about 10-12 minutes, stirring occasionally.
  • While the pasta cooks, slice the rested chicken into bite-sized pieces.
  • Once the pasta is done, stir in grated parmesan cheese and heavy cream until the cheese melts and the sauce coats the pasta.

Final Assembly

  • Add the chicken pieces back into the skillet along with chopped parsley and toss to combine.
  • Taste and adjust seasoning as necessary before serving.

Notes

Serve with a green salad or warm crusty bread. Avoid burning the garlic to prevent bitterness. Store leftovers in an airtight container.
