Preparation

  • Begin by heating the olive oil in a large skillet or sauté pan over medium heat. When the oil shimmers, it’s ready for the next ingredient.
  • Add the diced chicken to the pan. Cook it, stirring occasionally, until the pieces are browned and just cooked through.
  • Incorporate the diced onion and minced garlic into the skillet. Stir together for 2-3 minutes until the onion softens.
  • Stir in the rice, ensuring it is well-coated.
  • Pour in the drained black beans, frozen corn, and diced tomatoes along with their juices. Stir to combine.
  • Add the chicken broth and the spices (chili powder, cumin, smoked paprika, oregano, salt, and black pepper). Stir well.
  • Bring to a boil over medium-high heat, then reduce to low and cover. Let simmer for 15-20 minutes until the liquid is absorbed and rice is tender.
  • Remove from heat, let sit covered for a few minutes, then fluff rice with a fork before serving.
