Preparation

  • Start by dicing the onion and chicken into small, even pieces to ensure they cook properly and evenly. Pat the chicken dry with a paper towel to remove excess moisture.
  • In a shallow dish, combine the finely grated Parmesan and all the seasonings: dried parsley, garlic powder, smoked paprika, Italian seasoning, salt, black pepper, and crushed red pepper flakes. Mix them together well.
  • Coat the diced chicken in this seasoning blend, ensuring every piece is evenly covered.

Cooking

  • Heat 2 tablespoons of butter in a large skillet over medium heat. Add the diced onion and cook until it begins to brown and soften. Set the onion aside.
  • In the same pan, add the remaining 2 tablespoons of butter over medium-high heat. Add the seasoned, diced chicken and cook until golden brown on all sides, about 5-7 minutes.
  • Pour in the chicken broth and return the cooked onion to the pan. Stir gently, bringing everything to a simmer.
  • Add the uncooked rice to the pan and stir it into the mixture. Cover the pan with a lid and cook until the rice is tender and has absorbed the liquid, about 18 minutes.
  • Once the rice is cooked, remove from heat and fluff the rice gently with a fork. Top with fresh parsley and an extra sprinkle of grated Parmesan before serving.

Notes

Leftovers can easily be packed for lunch or enjoyed as a snack. For breakfast, try reheating it with a fried egg for added protein.
