  • 1 bunch fresh asparagus crunchy, fresh vegetable

Preparation

  • Begin by preparing the chicken, making sure to trim any excess fat. Season both sides of the chicken breasts with salt, pepper, and dried oregano.
  • Set the salted and seasoned chicken aside while you prepare the other ingredients.
  • Rinse the asparagus under cool water, then snap off the tough ends. Pat the asparagus dry with a towel.

Cooking

  • In a large skillet, heat the extra virgin olive oil over medium heat until it shimmers slightly.
  • Carefully place the seasoned chicken breasts into the pan, cooking them for about 5–7 minutes on each side until golden brown and cooked through.
  • Once the chicken is cooked, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the asparagus to the skillet, tossing it with the chicken and allowing it to cook until brightened in color and tender, about 3–5 minutes.
  • Squeeze the juice of one lemon over the chicken and asparagus, stirring gently to combine.
  • Check the doneness of the chicken. Adjust seasoning with more salt and pepper if desired.

Serving

  • Remove the pan from heat and let it rest for a few minutes before serving. Optionally sprinkle with grated Parmesan cheese.

Notes

Serve hot as a wholesome family dinner or with a side salad for a light lunch. Leftovers can be enjoyed cold or added to grain bowls.
