Ingredients
  

Chicken

  • 2 boneless, skinless chicken breasts or thighs, sliced into cutlets
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil

Sauce

  • 3 cloves garlic minced
  • 1/3 cup sun-dried tomatoes chopped
  • 1 tbsp tomato paste
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 1/2 tsp red pepper flakes adjust to taste

Pasta

  • 8 oz pasta penne, rigatoni or spaghetti
  • 1/2 cup reserved pasta water if needed to thin sauce

Garnish

  • fresh basil chopped
  • extra Parmesan cheese for topping

Instructions
 

  • Pat chicken dry and season both sides with salt, pepper, and paprika.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown, 4–5 minutes per side. Remove and set aside.
  • In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and tomato paste. Stir well.
  • Deglaze pan with chicken broth, scraping up browned bits. Pour in cream and bring to a gentle simmer.
  • Stir in Parmesan and red pepper flakes. Let simmer until slightly thickened.
  • Meanwhile, cook pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
  • Return chicken to the skillet, spoon sauce over top, and simmer 5 minutes.
  • Add pasta to the skillet and toss to coat. Add reserved pasta water as needed.
  • Top with fresh basil, extra Parmesan, and more chili flakes if desired. Serve warm.

Notes

For a lighter version, swap cream with half-and-half or Greek yogurt. For a low-carb version, use zucchini noodles. Refrigerate leftovers up to 3 days, or freeze the sauce and chicken separately.
