  • 8 oz pasta such as rigatoni, penne, or fusilli holds sauce well

  • 1/2 cup chicken broth low sodium enhances overall flavor
  • 1 cup heavy cream creates a rich sauce
  • 1/2 cup sun-dried tomatoes in oil drained and chopped offers tang and sweetness

  • 1 tsp Italian seasoning brings herbal notes
  • 1/4 tsp red pepper flakes or more, to taste adds heat

  • 1/4 cup fresh basil chopped, for garnish adds freshness

Instructions
 

Preparation

  • Begin by cooking the pasta according to the package instructions, using plenty of water and a bit of salt. Drain and set aside, reserving a little pasta water if needed.
  • In a large skillet, heat olive oil over medium heat. Add the chicken cutlets seasoned with salt and pepper, cooking until golden brown and no longer pink, about 5 to 7 minutes.
  • Remove the chicken from the skillet and set aside on a plate. In the same skillet, add minced garlic and sauté until fragrant but not brown.
  • Pour in chicken broth, scraping up bits from the bottom of the skillet. Simmer for a couple of minutes until slightly thickened.
  • Reduce heat to low, stir in heavy cream, mixing with the broth, and allow the sauce to thicken.
  • Add chopped sun-dried tomatoes and parmesan cheese, stirring until the cheese melts and the sauce is creamy.
  • Season the sauce with Italian seasoning and red pepper flakes, adjusting to taste.
  • Return the chicken to the skillet, coating it well with the sauce.
  • Add cooked pasta, tossing everything together. If it’s too thick, add reserved pasta water to adjust consistency.
  • Serve immediately, garnishing with freshly chopped basil.

Notes

To enhance flavor, serve with a side salad or crusty bread. Pair with light white wine for a more relaxed meal.
