Ingredients
  

Chicken & Seasoning

  • 3 boneless skinless chicken thighs
  • 3/4 tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sun‑dried tomato oil

Pasta & Sauce

  • 12 oz farfalle pasta
  • 2 tbsp butter
  • 2 tbsp dried shallots
  • 2 tbsp minced garlic
  • 1 tbsp minced onion
  • 3 tbsp gluten‑free flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese shredded
  • 1/4 cup sun‑dried tomatoes diced
  • 2 tbsp tomato paste
  • 1 cup spinach diced
  • fresh basil chopped, for garnish

Instructions
 

  • Season the chicken with smoked sweet paprika, Italian seasoning, salt, and black pepper.
  • Heat the sun‑dried tomato oil in a large skillet over medium heat. Sear the seasoned chicken thighs about 3 minutes per side until golden and cooked through. Remove and let rest.
  • Cook the farfalle pasta in boiling salted water until al dente, drain, and set aside.
  • In the same skillet, melt butter and sauté shallots, minced garlic, onion, and sun‑dried tomatoes until fragrant.
  • Add tomato paste, Italian seasoning, salt, and paprika. Stir to combine.
  • Sprinkle in gluten‑free flour and stir for a minute. Gradually pour in chicken broth and heavy cream, stirring until the sauce begins to thicken.
  • Add the spinach and cook until wilted. Stir in the Parmesan cheese until creamy.
  • Dice the rested chicken and add it and the cooked pasta to the skillet. Toss gently to coat everything in the creamy sauce.
  • Garnish with fresh basil and serve warm.

Notes

This dish pairs beautifully with garlic bread or a fresh green salad. Use the pasta water if the sauce thickens too much, and add extra veggies if desired.
