Preparation

  • Start by seasoning the chicken breasts with salt and black pepper, ensuring that each piece is evenly coated.
  • In a large skillet, heat the olive oil over medium heat and add the seasoned chicken breasts. Sear undisturbed for about 5-7 minutes on one side until golden brown.
  • Flip the chicken breasts over and add the minced garlic to the skillet. Sauté for about 1 minute until fragrant.

Cooking

  • Pour in the low-sodium chicken broth and let it come to a gentle simmer.
  • Add the heavy cream to the skillet, stirring gently to combine.
  • Incorporate the grated parmesan cheese, stirring until it melts into the sauce.
  • Add the sun-dried tomatoes, dried oregano, and crushed red pepper flakes.
  • Allow the skillet to simmer for an additional 5-10 minutes to fully cook the chicken and let the flavors meld.
  • Sprinkle the chiffonaded fresh basil over the top just before serving.
  • Finish with an additional sprinkle of grated parmesan cheese for garnish.

Notes

For best results, consider marinating the chicken in olive oil, garlic, and spices for a couple of hours before cooking. Be careful not to overcook the chicken and adjust crushed red pepper flakes to taste.
