Pat chicken breasts dry and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden brown, about 4–5 minutes per side. Remove from skillet.
Add garlic and sun-dried tomatoes to the skillet, sauté for 1–2 minutes.
Pour in chicken broth and heavy cream. Stir and bring to a gentle simmer.
Stir in parmesan cheese and Italian seasoning. Simmer until sauce thickens slightly.
Return chicken to skillet, coat with sauce, cover, and cook for 10–15 minutes until chicken is fully cooked through.
