  • 4 large low-carb tortillas or wraps structural base for wraps
  • 1 tablespoon fresh parsley, chopped for brightness
  • Salt and pepper to taste enhances overall flavor
  • 1 handful baby spinach optional, for added freshness

Preparation

  • Begin by preparing your ingredients. If using cooked chicken breast, ensure it is well-shredded. If you opted for rotisserie chicken, shred it into bite-sized pieces.
  • In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, minced garlic, and softened cream cheese. Mix them together until the cheeses are evenly distributed throughout the chicken.
  • Add the olive oil to the mixture along with salt and pepper to taste. Stir it until everything is well incorporated.
  • Take one of the large low-carb tortillas and place a generous portion of the chicken and cheese mixture in the center.
  • Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom.
  • Repeat the process for the remaining tortillas, using the rest of the chicken and cheese mixture.
  • Once all the wraps are made, place them seam-side down in a baking dish or a large plate.
  • If you’re including baby spinach, sprinkle a handful over the wraps before serving.
  • Add the fresh parsley on top for a pop of color and flavor.

Notes

For best results, use softened cream cheese for easier mixing and be cautious not to overstuff the tortillas.
