  • 1/4 cup cream cheese, softened creates a creamy consistency
  • 1 tablespoon olive oil for cooking and moisture
  • 4 large low-carb tortillas or wraps serves as a base
  • 1 tablespoon fresh parsley, chopped adds a fresh touch

  • 1 handful baby spinach optional, adds color and nutrients

Instructions
 

Preparation

  • In a mixing bowl, combine the shredded chicken breast, mozzarella cheese, cheddar cheese, minced garlic, cream cheese, olive oil, and salt and pepper. Blend these ingredients thoroughly until they are well incorporated and have a creamy texture.
  • Lay out a large low-carb tortilla on a clean surface. Spoon a generous portion of the cheesy chicken mixture onto the center of the tortilla.
  • Fold the sides of the tortilla inward, then roll it up from the bottom, encasing the filling securely.

Cooking

  • Heat a frying pan over medium heat and add a little olive oil. Place the wrapped tortilla seam-side down in the pan.
  • Allow the wrap to cook for a few minutes until golden-brown on one side, then flip carefully to cook the other side.
  • Once both sides are cooked to your liking, remove the wrap from the pan and let it cool slightly.
  • Chop fresh parsley and sprinkle it over the top of the wrap before serving.

Notes

Ensure your cream cheese is fully softened for easier mixing. Don’t overload your tortillas to keep them manageable. Adjust seasoning with additional herbs or spices to taste.
