Preparation

  • Wash and dice the 2 pounds of russet potatoes into even pieces for uniform cooking.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the diced potatoes along with 1 teaspoon of paprika, ½ teaspoon of garlic powder, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Stir gently to coat.

Cooking Potatoes

  • Cook the potatoes for about 10-15 minutes, stirring occasionally, until tender.

Cooking the Protein

  • In a large skillet, add 1 pound of ground beef or ground turkey and cook until browned.
  • Sprinkle in 2 tablespoons of taco seasoning, pour in ½ cup of tomato sauce and ¼ cup of water. Mix well.
  • Cook for an additional 5 minutes until heated through and slightly thickened.

Assembling the Bowl

  • To assemble, layer seasoned diced potatoes at the bottom of a serving bowl.
  • Top with the seasoned ground meat mixture.
  • Sprinkle 1 cup of cheese over the meat while warm, allowing it to melt slightly.
  • Finish by adding 1 cup of lettuce, 1 cup of tomatoes, and slices of avocado.
  • Drizzle with ½ cup of sour cream, and top with cilantro and green onions.
