Preparation

  • Begin by preparing the chicken. If using chicken breasts, consider cutting them into smaller pieces to cook evenly. Season with Mexican-style seasoning on all sides.

Cooking the Chicken

  • In a large skillet, heat the cooking oil over medium-high heat. Add the seasoned chicken breasts and cook on one side for about 5-7 minutes until golden.
  • Flip the chicken to brown the other side for another 5-7 minutes until cooked through.
  • Remove the chicken from the skillet and set aside.

Cooking the Chorizo and Vegetables

  • Add the chorizo to the same skillet and break it up while sautéing for about 5 minutes until browned.
  • Add the bell pepper and onion to the skillet, stirring to soften for 3-5 minutes.

Combining Ingredients

  • Return the chicken to the skillet, nestling it among the chorizo and vegetables. Sprinkle the cheese on top and cover to melt.
  • Once melted, stir everything together before serving.

Notes

Pat chicken dry before seasoning for better browning. Adjust seasoning to taste. Use high-quality chorizo for best flavor. Cover the skillet while melting cheese to promote a gooey texture.
