Preparation

  • Begin by cleaning and chopping the boneless skinless chicken thighs into 1½ inch pieces. Pat them dry to help the marinade adhere better.
  • Mince the garlic and mix it with the chicken pieces, along with the cayenne pepper, salt, and lemon juice. Combine thoroughly so the chicken is well-coated.
  • Pierce the chicken pieces with a fork to allow the marinade to penetrate deeper and marinate for at least 30 minutes.
  • Soak bamboo skewers in water for about 30 minutes to prevent them from burning during cooking.

Cooking

  • Melt the salted butter in a small pan over low heat, then add the minced garlic and cook until golden brown.
  • After the garlic butter has cooled, add olive oil, Parmesan, garlic powder, paprika, black pepper, salt, and fresh thyme. Stir well to combine.
  • Preheat your oven to 240°C/464°F.
  • Thread the marinated chicken onto the soaked skewers and place them on a lined baking sheet.
  • Baste the chicken skewers with the butter mixture before roasting. Roast for about 5 minutes, then flip and roast another 5 minutes.
  • Baste once more and switch the oven to broil. Cook for an additional 4-5 minutes until golden brown.

Notes

Let the chicken marinate longer than 30 minutes for deeper flavor. Keep the chicken in a single layer for even cooking.
