Preparation

  • Quarter the red potatoes and slice the sweet yellow onion into wedges. Cut the carrots into sticks about 2-3 inches long. Place these vegetables in the slow cooker.
  • Arrange the chicken thighs on top of the vegetables.
  • In a separate bowl, mix together the lemon juice and pressed garlic. Pour this mixture evenly over the chicken and vegetables.
  • Slice the lemon into rounds and place the slices on top of the chicken.
  • Sprinkle the chopped rosemary and thyme leaves over the entire dish.
  • Season the entire mixture with Kosher salt and fresh ground pepper.

Ensure the vegetables are cut evenly for consistent cooking. Marinate chicken in lemon-garlic for extra flavor. Avoid opening the slow cooker lid while cooking. Use thawed chicken for better results.
