Instructions
 

Preparation

  • In a mixing bowl, whisk together the flour, baking soda, and salt.

Mixing Wet Ingredients

  • In another bowl, beat the softened butter and sugar until light and fluffy.
  • Add the egg, lemon juice, lemon zest, and vanilla extract, mixing until fully combined.

Combining Ingredients

  • Gradually mix in the dry ingredients until just combined to form a cohesive dough.
  • If using, add yellow food coloring and mix until evenly distributed.

Forming Cookies

  • Use a cookie scoop or tablespoon to portion the dough, rolling each piece into a ball.
  • Roll each ball in granulated sugar and powdered sugar mixture.

Baking

  • Place the cookie balls on the prepared baking sheets with space in between.
