  • 14 ounces Cauliflower florets, cut into bite-size pieces adds texture
  • 32 ounces Chicken breast provides protein
  • 1 teaspoon Onion powder for flavor
  • 1 teaspoon Garlic powder for flavor
  • ½ teaspoon Salt enhances overall flavor
  • ¼ teaspoon Pepper adds seasoning
  • 1 tablespoon Olive oil for cooking
  • 2 cups Keto Alfredo Sauce creamy consistency
  • 12 ounces Shredded mozzarella cheese, divided melts and binds

Preparation

  • Start by steaming the cauliflower. Place the florets in a microwave-safe bowl and add 1 cup of water. Cover with a damp paper towel and microwave on high for about 3-5 minutes until fork-tender. Once done, drain the cauliflower and pat dry.
  • While the cauliflower steams, cut the chicken breast into 1-inch cubes, seasoning it with onion powder, garlic powder, salt, and pepper.

Cooking

  • In a skillet over medium-high heat, heat the olive oil. Add the seasoned chicken cubes and cook for about 10 minutes, stirring occasionally, until the chicken is no longer pink. Set aside.
  • Preheat your oven to 350 degrees F.
  • In a small pot over medium-low heat, warm the keto Alfredo sauce and stir in 3 ounces of mozzarella cheese until melted.
  • Spray the 13x9 inch casserole dish with non-stick spray and pour ½ cup of the prepared keto Alfredo sauce into the bottom.
  • Layer the casserole by adding half the steamed cauliflower, half the cooked chicken, and ¾ cup of keto Alfredo sauce, followed by 4.5 ounces of mozzarella cheese. Repeat this layering.
  • Place the casserole in the preheated oven and bake for about 30 minutes until warmed through, cheese is melted, and the top is slightly golden.

Notes

Ensure the cauliflower is well-drained after steaming; excess moisture can make the casserole watery. For extra flavor, consider using flavored olive oil or adding fresh herbs. Make sure not to overcrowd the skillet when cooking the chicken.
