  • 2 bone-in, skin-on chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • salt and freshly cracked black pepper to taste
  • lemon wedges for serving, optional

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
  • Pat the chicken breasts dry with paper towels to help the skin crisp up.
  • Drizzle olive oil over the chicken. Season generously with garlic powder, paprika, onion powder, thyme, salt, and pepper. Rub the seasoning evenly over each piece.
  • Place the chicken skin-side up on the prepared baking sheet.
  • Roast for 35–45 minutes, or until internal temperature reaches 165°F (74°C). Skin should be golden and crispy.
  • Let rest for 5–10 minutes before slicing. Serve with lemon wedges if desired.

Notes

Patting the chicken dry is key to crispy skin. For extra flavor, marinate in olive oil, lemon juice, and herbs for an hour before roasting. Letting the chicken rest after cooking keeps the juices in for a tender bite.
