Preparation

  • In a large bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, chili powder, salt, and pepper. Whisk the ingredients together until they form a cohesive marinade.
  • Add the boneless, skinless chicken breasts to the bowl with the marinade and turn them over gently to ensure each piece is well-coated.
  • Cover the bowl with plastic wrap or transfer the chicken and marinade to a resealable plastic bag. Let the chicken marinate for at least 30 minutes at room temperature or refrigerate for a couple of hours.

Cooking

  • Preheat your grill to medium-high heat.
  • Place the marinated chicken breasts on the hot grill and cook for about 6-7 minutes on one side without moving them.
  • After flipping, cook for another 6-7 minutes or until the chicken reaches an internal temperature of 165°F.
  • Once done, remove the chicken from the grill and let it rest for 5-10 minutes.

Notes

Serve with steamed vegetables, or sliced on salads or in sandwiches. Leftovers can be enjoyed cold or gently reheated. Marinate for at least 30 minutes for best flavor.
