Preparation

  • In a mixing bowl, combine the olive oil, lemon juice, minced garlic, honey, Dijon mustard, paprika, salt, and black pepper. Whisk until smooth.
  • Coat the chicken breasts thoroughly with the marinade and let it marinate for at least 30 minutes.

Cooking

  • Preheat the grill or grill pan to medium-high heat.
  • Remove the chicken from the marinade, letting excess marinade drip off. Grill the chicken breasts for 6 to 8 minutes without moving.
  • Flip the chicken breasts and continue grilling for another 6 to 8 minutes, checking for doneness with a meat thermometer (internal temperature should be 165°F).
  • Remove from the grill and let the chicken rest for 5 minutes before slicing.

Notes

For best results, marinate longer if time allows, always preheat your grill, and let chicken rest after grilling. Use a meat thermometer to check for doneness, and avoid flipping too early.
