Preparation

  • Place the 2 pounds of boneless, skinless chicken thighs in a mixing bowl. Trim any excess fat.
  • In a separate bowl, whisk together the olive oil, soy sauce, and lemon juice.
  • Add the minced garlic, smoked paprika, dried oregano, black pepper, and salt to the marinade mixture. Stir well.
  • Pour the marinade over the chicken thighs and coat them evenly.
  • Cover and let the chicken marinate for at least 15 minutes or up to several hours.

Cooking

  • Preheat the grill or grill pan over medium-high heat.
  • Place the marinated chicken thighs on the hot grill, spaced out properly.
  • Cook undisturbed for 6-7 minutes until grill marks form.
  • Flip the chicken thighs and grill for another 6-7 minutes, checking for 165°F internal temperature.
  • Remove from the grill and let rest for 5 minutes before slicing or serving.

Notes

For best results, let the chicken marinate for at least one hour and avoid overcrowding the grill. Let it rest to maintain juiciness.
