Ingredients
  

For the skewers

  • 15 pieces wooden skewers, soaked in water for 30 minutes to prevent burning
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes meaty and moist
  • 1 teaspoon kosher salt enhances flavor
  • ½ teaspoon black pepper adds warmth
  • ½ teaspoon chili powder provides mild heat
  • 2 tablespoons extra virgin olive oil adds richness
  • 4 pieces yellow peaches, quartered, then halved sweet and juicy, totaling 32 pieces
  • 3 medium jalapeno peppers, halved, seeded, cut into chunks spicy and vibrant
  • ½ cup peach preserves for glazing, sweet and thick
  • 1 tablespoon extra virgin olive oil to brush onto skewers
  • 1 teaspoon soy sauce adds umami flavor
  • 1 teaspoon apple cider vinegar balances sweetness
  • 1 teaspoon Dijon mustard for a bit of tang
  • ½ teaspoon garlic, minced adds depth of flavor
  • ½ teaspoon kosher salt for the glaze
  • teaspoon black pepper seasoning for the glaze
  • teaspoon red pepper flakes adds extra heat

Instructions
 

Preparation

  • In a large bowl, combine the cubed chicken with kosher salt, black pepper, chili powder, and olive oil. Toss until the chicken is evenly coated.
  • Prepare your skewers by threading one piece of peach, followed by chicken, jalapeño, another piece of chicken, jalapeño, and finish with peach.

Cooking

  • Preheat the air fryer to 375°F (190°C).
  • Brush skewers with olive oil and place them in the air fryer in a single layer.
  • Air fry the skewers for 11-12 minutes until the chicken reaches an internal temperature of 165°F.

Glazing

  • In a medium saucepan, combine peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Cook over low heat until warmed through.
  • Once the skewers are cooked, remove them from the air fryer and brush with the warm peach glaze.

Notes

Enjoy these skewers for breakfast with scrambled eggs, as snacks, or paired with rice or a fresh salad. Leftovers can be added to wraps or enjoyed cold.
