Preparation

  • In a large bowl, whisk together the lime juice, honey, minced garlic, and oil until well combined.
  • Add smoked paprika, kosher salt, ground cumin, and crushed red pepper flakes. Stir gently to incorporate.
  • Place the chicken thighs into the marinade and toss to coat evenly.
  • Cover with plastic wrap or a lid, and let marinate for at least 1 hour or up to 24 hours.

Cooking

  • Preheat your grill or grill pan to medium-high heat.
  • Place the marinated chicken thighs on the grill, cooking for about 5-7 minutes on each side until the internal temperature reaches 165°F.
  • Remove from grill and let the chicken rest for about 5 minutes before serving.

Notes

For best results, marinate the chicken overnight and avoid overcrowding the grill.
