Ingredients

  • 6 chicken thighs bone-in or boneless
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic minced
  • 1 cup chicken broth

Flavor Add-Ins (Optional)

  • soy sauce for savory depth
  • honey or brown sugar for sweetness
  • lemon juice for brightness

Instructions
 

  • Pat chicken thighs dry. Season with salt, pepper, and minced garlic to coat evenly.
  • Set Instant Pot to sauté mode. Add olive oil and sear chicken for 2–3 minutes per side until golden. Work in batches if needed.
  • Pour in chicken broth and any desired add-ins (soy sauce, honey, lemon juice). Scrape the bottom of the pot to release browned bits.
  • Seal the lid and cook on high pressure for 10 minutes (boneless) or 12 minutes (bone-in). Allow natural pressure release for 5 minutes, then quick release.
  • Transfer chicken to a serving dish. Spoon sauce from the pot over the top. Serve warm with your favorite sides.

Notes

For a creamy version, stir in ½ cup of heavy cream after cooking. For a spicy version, add red pepper flakes or a splash of hot sauce.
