Ingredients
  

Core Ingredients

  • 6 chicken thighs bone-in or boneless, skin-on or skinless
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth low-sodium preferred

Flavor Boosters

  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tbsp soy sauce optional, adds umami depth
  • salt and black pepper to taste

Instructions
 

  • Turn on the Instant Pot to Sauté mode. Add olive oil, onion, and garlic. Cook until softened and fragrant, about 2–3 minutes.
  • Season chicken thighs with paprika, thyme, salt, and pepper. Rub seasoning all over the chicken.
  • Sear chicken thighs skin-side down in the Instant Pot for 2–3 minutes until lightly browned. Flip and cook another 1–2 minutes.
  • Pour in the chicken broth and soy sauce, scraping up any browned bits from the bottom.
  • Lock the lid, set valve to sealing, and pressure cook on High for 10 minutes. Allow 5 minutes natural release, then release any remaining pressure manually.
  • Open lid, spoon broth over chicken, and serve hot over rice, mashed potatoes, or with crusty bread.

Notes

Add sliced carrots, mushrooms, or baby potatoes before pressure cooking for a one-pot meal. Finish with lemon juice or chopped parsley for freshness.
