Instructions
Turn on the Instant Pot to Sauté mode. Add olive oil, onion, and garlic. Cook until softened and fragrant, about 2–3 minutes.
Season chicken thighs with paprika, thyme, salt, and pepper. Rub seasoning all over the chicken.
Sear chicken thighs skin-side down in the Instant Pot for 2–3 minutes until lightly browned. Flip and cook another 1–2 minutes.
Pour in the chicken broth and soy sauce, scraping up any browned bits from the bottom.
Lock the lid, set valve to sealing, and pressure cook on High for 10 minutes. Allow 5 minutes natural release, then release any remaining pressure manually.
Open lid, spoon broth over chicken, and serve hot over rice, mashed potatoes, or with crusty bread.
Notes
Add sliced carrots, mushrooms, or baby potatoes before pressure cooking for a one-pot meal. Finish with lemon juice or chopped parsley for freshness.
